There are not too many recipes lately that excite me. This one excites me. I just don’t have the energy some days to make a complicated meal. But I found that meals don’t need to be complicated to taste good. This is s simple chicken dish with simple ingredients that everyone should have in their house. More or less, the title gives the ingredients away. But there are a few secret ingredients that really elevate this dish to something special. And on top of all that, it’s made in only one pan, so clean up is simple. This recipe does not use garlic or white wine. The combination of the juices and mustard is enough to give it an amazing flavor.

Recipe:

  • Chicken thighs, bone in with the skin
  • Baby Yukon gold or red potatoes cut in half
  • Juice of 2 lemons
  • Juice of 2 oranges
  • 1 tablespoon of German or spicy brown mustard
  • Olive oil
  • Oregano
  • Salt and pepper to taste

Place chicken thighs in a large roasting pan, skin side up. Arrange the potatoes around the chicken. If the potatoes are small enough you do not need to cut them in half. In a small bowl or measuring cup mix the mustard with the lemon and orange juice till blended. Pour the juices over the chicken and potatoes. Drizzle everything with olive oil. Add oregano and salt and pepper to taste.

Cover the pan with foil and place in a 400 degree oven for 1 hour. Uncover and brown the chicken for another 25 – 30 minutes until golden brown.

Quick, simple and tasty!
